Discovery Espresso – Colonna Coffee – Buziraguhindwa Natural – Burundi. This natural coffee from Burundi is extremely clean tasting, with none of the earthy flavours of some African natural coffees. Great care is taken in the processing, which works thus: Cherries are soaked in water to remove floaters before being spread out on raised beds in a single layer for 2 days. During this time more sorting is carried out to remove over-ripes and underripes. When the layer is thin the coffee drys fast so after the initial 2 days the layers get built up and all the cherries are turned and moved multiple times per day.
